A cookery course in Spoleto

 

 

 

                            

 

 

This cookery course is organized in a hotel in the medieval centre of Spoleto, which is situated on a hilltop and is connected with the evergreen mountain Monteluco by the Ponte delle Torri (XIV sec.).  Spoleto is full of life, with its many squares, lovely little streets, shops with local delicacies and handicrafts, restaurants and a lot of sights to visit such as the Duomo with the frescoes of the Florentine painter Filippo Lippi and the Umbrian il Pinturicchio, the Roman theatre with the archaeological museum, the Roman house and the museum 'Pinacoteca Civica'.  

 

Program:

Day 1

 

 

 

 

Arrival in your hotel  

                                     

At the end of the afternoon there's a welcome drink and you will meet the chef of the restaurant. In the evening you will have diner in the restaurant of the hotel, discovering their delicious specialities. They have dishes on the menu such as:

Petto d'oca  carpaccio con misticanza all' aceto di lamponi (goose breast with mixed salad and raspberries vinegar) 

Ravioli di grano duro au funghi con vellutata di pachino a tartufo (Ravioli filled with mushrooms and a sauce of cherries tomatoes and truffle)

Tortelloni di radicchio e ricotta con pesto estivo (Tortelloni filled with red lattuce and ricotta cheese with a summer pesto sauce)

Il filetto di manzo con frutti di bosco  (Beef filet with wild berries)

Filetto di maialino al Sagrantino con bacche di ginepro (pork filet with the red wine Sagrantino)

Il Soufflé al cioccolato con crema leggera al Rum (Chocolate soufflé with Rum cream)

 

Day 2 Cookery course

The first cookery lesson will take place after breakfast. On the program are 'antipasti' such as crostini with chicken liver pâté, homemade focaccia filled with caciotta cheese and ham, different bruschettas with olive oil, tomatoes and truffle...which you will taste at lunchtime.

The second cookery lesson begins at 3.30 pm and involves the preparation of 'Primi' such as homemade 'strangozzi' pasta with truffle sauce, gnocchi with tomato sauce... At 5.30 pm the course is finished, but during dinner you will taste your Primi.

 

Day 3 Montefalco

Today you will taste some authentic Umbrian products. Together with a guide you will visit an olive oil farm and a wine grower. You will lunch in Montefalco, a nice little medieval town in the Sagrantino D.o.c.g. and Rosso di Montefalco D.o.c. wine area.

In the evening you are free to dine in one of the typical little restaurants of Spoleto.

 

Day 4  Departure

 

The package includes:
