Tozzetti (Almond biscuits)
Ingredients:
350 g. flour
Warm
the oven on 180° C.Mix
all the ingredients and kneed it thoroughly. Roll the mixture into a big role
and put it in the for about 20 min. in the oven. Take out the batter and cut the
roles in slices of 1 1/2 cm. Put back for some more minutes the tozzetti
in the oven.
Mele al forno farcite (stuffed apples)
ingredients (4 pers.):
4 apples of the same size, a tray fresh mixed fruits of the woods, juice from 1 lemon, 4 spoons or sugar, whipped cream
Clean the apples, cut the top and hollow them out. Strew 2 spoons of sugar inside the hollowed apples. Put them in a oven dish and bake them about 10 min in the hot oven (200 °C). Let them cool down. Clean in the mean time the different fruits, sprinkle the lemon juice and strew the rest of the sugar over them. Fill the apples with the fruits and decorate them with some whipped cream.
A Lemon Tart (crostata di limone)
Ingredients:
for paste 250 gr. flour, 60 gr. sugar, 2 egg-yolks, 130 gr. butter
for filling 5 egg-yolks, 6 lemons, 1 orange, 100 gr. sugar, 20 butter
Grease a cake tin with butter and warm the oven on 180°C.
Melt the butter and mix quickly the flour, egg-yolks, melted butter, sugar and a pinch of salt to an homogeneous mass. Spread the paste over the bottom of the cake tin and make a little raised border. Beat well for the filling the egg-yolks with the sugar. Join the butter, cut it in little pieces, and the juice of the lemons and orange with the cream. Mix well. Fill the paste in the cake tin with the lemon cream and bake it in the middle of the oven in 40 min. Take the lemon tart out of the oven en let it cool down.
Limoncello (lemon liquor)
Ingredients: 1l. alcohol (90°/95°), 700 g. sugar, 8 biological lemons, 2,3 l. water
a hermetic closing pot of 3 l., coffee filters
Boil the water, dissolve the sugar in it and let it cool down. Wash well the lemons and peel them thinly. Pour the alcohol and the sugar water in the pot and join the lemon skin. Let the lemon liquor for two weeks in the pot, shake it well every day. Filter after two weeks the lemon liquor, pour it in normal bottles and ready is your lemon liquor.
